Organic Gourmet Purple Garlic Clove

This came from Whole Foods and it is the biggest garlic clove I've ever seen (not sure if I've ever handled a clove of elephant garlic, I imagine it must be atleast this big too). And it wasn't just the one, the rest of the bulb was full of other oversized cloves too. I tried using one to make
aïoli but it didn't work out at all. Everything seemed to be going smoothly, I was adding the oil bit by bit and whisking away and the mixture was staying quite thick, but then I accidently dumped more oil than I intended and the texture became irreperably runny and ruined. So I gave up for the time being and turned it into salad dressing (which was delicious, but I still really want to get aïoli/mayo-making down) .
